Recipe for Zucchini Bread

Sometimes you want a simple, basic, delicious moist zucchini bread recipe without all those pesky distractions. Today’s recipe is my original zucchini quick bread at its best.

  • Freezer friendly, no frills recipe.
  • Delicious with or without icing.

Ingredient Notes

Ingredients needed to make zucchini bread.
  • Zucchini – It’s not zucchini bread without it! Check out my post on How to Shred Zucchini for best tips and tricks on baking with this green summer squash. You can use frozen, shredded zucchini by thawing and squeezing out the excess liquid. Also, NO NEED to peel the zucchini.
  • Vegetable oil – Makes quick breads like this one moist, dense and tender without affecting the flavor.
  • Brown sugar – Sweetens the quick bread while adding a bit more moisture and the faintest touch of molasses flavor.
  • Milk – You can use any kind of milk to add liquid to the batter. Whole milk, skim milk or even plain unsweetened nondairy milks will all work well in this recipe.
  • Cinnamon and allspice – The aroma of these spices transforms the simple bread into an irresistible treat.

Aimee’s Tip

Always choose pure vanilla extract (or make you own vanilla extract). Imitation can be bland and leave an aftertaste.

How to Make Zucchini Bread

Making zucchini bread from scratch is easy as can be.

  1. First, shred your zucchini. Use my guide on how to grate zucchini for bread. Combine it with butter, vegetable oil, milk, vanilla and eggs. Then whisk in all the dry ingredients until combined.
  2. Now, it’s time to bake your homemade zucchini loaf.
  3. Make sure to line your loaf pan with parchment paper before pouring in the bread batter. If you prefer, you can also use a baking spray with flour in it to keep your bread from sticking. I often use both just to make sure it’s easy to slide the baked loaf out of the pan.

Once you bake and cool the easy zucchini bread recipe, you can enjoy it plain or add a drizzle of homemade icing on top!

The icing adds a lovely touch of sweetness. The bread is still delicious without it, especially if you’re looking for a not-too-sweet slice to enjoy with your coffee.

Ingredients 

  • 2 cups finely shredded zucchini
  • cup vegetable oil
  • ¼ cup unsalted butter melted
  • ¼ cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 cup light brown sugar packed
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon allspice

Instructions 

  • Preheat oven to 400 degrees F. Line a 9-inch loaf pan with parchment paper (or use a baking spray with flour in it). Set aside.
  • In a large bowl, combine zucchini, oil, melted butter, milk and vanilla. Whisk in eggs. Add flour, sugar, baking powder, cinnamon, salt and allspice. Mix until well blended.
  • Pour bread batter into prepared loaf pan. Bake for 60-70 minutes, until a toothpick comes out clean. Remove from pan and cool on wire rack.

Notes

    • Add easy icing on top if prefered.
    • Store zucchini bread in airtight container at room temperature for up to 5 days.
    • Freeze bread in airtight container for up to 3 months.
    • If using frozen zucchini, be sure to squeeze out the excess liquid before measuring.
    • No need to peel the zucchini before using. If using smaller zucchini, no need to remove seeds. However if the zucchini is larger, slice in half and scoop out the seeds before shredding.
