Morning Glory Muffins

Looking for an easy breakfast idea that's good for you too? Morning Glory Muffins have a moist sweet crumb filled with nuts, fruit and orange zest. Quick and healthy muffins never tasted so good!

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 Tablespoon cinnamon
  • ½ teaspoon kosher salt
  • 1 cup plain greek yogurt
  • 1 cup granulated sugar
  • ½ cup melted coconut oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup shredded carrots
  • ½ cup chopped apples
  • ½ cup raisins
  • ½ cup chopped pecans
  • Zest from one orange

Instructions

    1. Preheat the oven to 350 degrees F. Line a cupcake pan with cupcake liners and set aside. 
    2. In a medium sized bowl, combine flour, baking powder, baking soda, cinnamon and salt and set aside.
    3. In a separate, large sized bowl, whisk together the greek yogurt, sugar, coconut oil, eggs and vanilla. Add in the flour mixture and whisk together just until combined.
    4. Next, fold in the carrot, apple, raisins, pecans and orange zest. Batter will be very thick and chunky at this point. 
    5. Fill your tins ¾ full and bake in preheated oven for 15-18 minutes or until a toothpick inserted comes out clean or with moist crumbs. 
    6. Allow to cool on a cooling rack for 15 minutes then serve and enjoy! These are delicious with a small pat of salted butter!

Notes

  • Butter: These taste AMAZING with a pat of salted butter on top (especially when warm).
  • Cupcake liners: I prefer to use cupcake liners in my muffin tin when baking these. Not only are they easier to remove from the pan this way, they're also so easy to serve and eat on the go! If you don't have liners you can still make these morning glory muffins; just be sure to spray the tin with baking spray first.
  • Storing: Keep the muffins in an airtight container to maintain freshness. They'll stay good for 3 -4 days.
