Why This Recipe is Best

This coffee frappe didn’t just happen. It was inspired.

This S’mores Coffee Frappe Milkshake is an upgraded version of Starbucks’ S’mores Frappuccino.

While that is a *good* drink, particularly with that strong Starbucks coffee taste, it was a little lacking. I wanted more marshmallow and graham cracker flavor and more creaminess.

I knew I could do it better. And I did!

  • Ice cream adds the perfect creamy element!
  • Chocolate syrup adds an extra sweet twist.
  • Plenty of coffee flavor for a pick-me-up!
  • All the great taste of s’mores made around the campfire with no camping or fire required.

I know I’ll be making this treat repeatedly this summer! It’s the perfect cool sweet treat with a nice jolt of caffeine to wake you up.

Ingredient Notes

  • Coffee – Feel free to use your favorite kind of coffee that you normally enjoy at home. It needs to be brewed and then cooled down to use in this recipe, so plan accordingly (or just make extra in the morning to have on hand later).
  • Marshmallow Cream – Also called marshmallow fluff, it has the perfect flavor and texture for this recipe.
  • Ice Cream – Buy your favorite brand of vanilla ice cream at the store or make no churn ice cream at home.
  • Chocolate Syrup – Buy it at the store or try our homemade chocolate syrup!
  • Garnishes – These take the milkshake over the top! We dip the glass in marshmallow cream and coat the rim in graham cracker crumbs. Also, drizzle the inside of the glasses with chocolate syrup. Top each milkshake with some whipped cream and a chocolate covered espresso bean for an extra treat. So fun!

Easy Instructions

STEP 1. Prepare the glasses. Spread the 1 Tbsp of marshmallow cream on the lip of the rim of each glass. Dip the rims into the crushed graham crackers. Drizzle the chocolate syrup onto the inside of the glass, in an up and down motion. Set aside.

STEP 2. Make the coffee frappe. In a blender, combine coffee, marshmallow cream and ice cream. Process until smooth and creamy. Pour into the two glasses.

STEP 3. Add toppings. Top the S’mores Frappuccino with whipped cream and a chocolate covered espresso bean. Enjoy your cool creamy summer treat right away!

Tips and Tricks

  • Be sure your coffee has cooled down at least to room temperature (if not refrigerated and cold) before you make this recipe or it’ll melt the ice cream and you’ll end up with a liquid drink, not a frosty one.
  • Want even more chocolate? Drizzle extra chocolate over the whipped cream before serving. You can add a handful of graham cracker crumbs to the top, just like Starbucks does.
  • You could also change up the flavor with chocolate ice cream if you prefer! Or use half vanilla, half chocolate.
  • This recipe can easily be doubled or tripled to serve a crowd. Why not invite a friend over and impress them with a frosty drink that’s better than anything from a coffee chain.

Does this milkshake taste like coffee?

There is a definite coffee flavor to this shake–we like it that way! The coffee taste is balanced by the creamy sweetness of the ice cream and the sweet chocolate syrup, so it’s definitely not bitter.

Can I make this milkshake without coffee?

Sure! Just swap the coffee for milk to make a regular s’mores milkshake without the caffeine content or coffee flavor.

Can I substitute espresso for the coffee?

Yes, you can use espresso in place of the coffee for this milkshake. It will result in a much stronger drink, so be prepared for the jolt!

Ingredients 

For the milkshake:

  • ½ cup brewed coffee chilled or cooled to room temp
  • ½ cup marshmallow cream
  • 4 cups vanilla ice cream
  • 2 Tablespoons chocolate syrup

For the garnish:

  • 1 Tablespoon marshmallow cream
  • 2 Tablespoons crushed graham cracker
  • ¼ cup whipped cream
  • 2 chocolate covered espresso beans

Instructions 

  • To the rim of two glasses, spread the 1 Tbsp of marshmallow cream on the lip of the rim. Drizzle the chocolate syrup onto the inside of the glass, in an up and down motions.
