Here’s what you need to make this Loaded Baked Potato Dip.

  • Cheddar cheese. Shred it at home for best melting. Bagged shredded cheese usually contains anti-caking agents that interfere with melting.
  • Bacon. Cook the bacon crispy before adding to the dip.
  • Sour cream. Use full fat sour cream for best flavor.
  • Cream cheese. Soften to room temperature.
  • Green onions.
  • Potato Chips– this is where the “baked potato” flavor brings it all together! (buy an extra bag so you can make a batch of our sweet and salty potato chip cookies)

There are no potatoes in this recipe. Rather than containing potatoes, the dip is made from common loaded baked potato toppings and served with potato chips!

Yes, feel free to make this dip ahead of time. You can assemble in the morning, chill and then heat when ready to serve. Or enjoy it cold!

Can this be made vegetarian?

Yes, you can omit the bacon or use a vegetarian bacon substitute to make a meatless dip.

Can I use a different kind of cheese besides cheddar?

Other shredded cheeses can be substituted for the cheddar. Monterey and Colby cheese would both be tasty options!

Loaded Baked Potato Chip Dip Recipe

Ingredients 

  • 2 packages cream cheese, softened to room temperature 8 oz each
  • 1 cup sour cream
  • 6 green onions sliced, divided
  • 2 cups shredded cheddar cheese divided
  • ¾ cup cooked and crumbled bacon divided

Instructions 

  • In a mixing bowl, combine cream cheese and sour cream until blended.
  • Add in 5 sliced green onions, 1 cup cheddar, and 1/2 cup cooked bacon bits.
  • Spread mixture in a deep dish pie plate, or similar sized baking dish (about 1-2 qt). Make sure it is microwave friendly (if heating that route) or oven safe (if heating that route).
  • Top with remaining cheese and cook.
  • If microwaving, cover with plastic wrap and cook for about 5 minutes.
  • If cooking in oven, cook uncovered for about 20 minutes in a 375 degree F oven.
  • When done cooking, top with remaining green onions and bacon. Serve hot with potato chips.

Notes

  • SERVE: Some people love this dip served cold. If that’s YOU, combine everything in a bowl (or pie plate), and serve immediately or refrigerate for up to 24 hours before serving.
  • Do not leave out of refrigerator for more than two hours.

    This dip was absolutely delicious and was a huge hit! Served with waffle fries, and it literally tasted like eating a loaded baked potato! I cooked in the crockpot for ease, and it was perfect!
