Ingredient Notes
- Dark chocolate morsels – We use melted chocolate chips in the batter instead of cocoa powder. It makes the brownies even fudgier and richer with a deep cocoa flavor.
- Unsweetened cocoa powder – I recommend using Ghirardelli or Rodelle brands in the chocolate frosting.
- DOVE® PROMISES Caramel Milk Chocolates – These are individually wrapped candies with a caramel center. Feel free to use another brand of caramel-filled chocolate candy (Rolos) if preferred. Or stuff one of our homemade caramels into the brownie for delicious flavor..
- Caramel sauce – Ice cream sundae topping works well here. It adds the perfect amount of caramel flavor to the chocolate frosting.
Easy Instructions
First, make the brownie batter. Spoon batter evenly into the cavities of a mini muffin pan.
After baking, immediately press an unwrapped Dove chocolate (or Rolo) into the center of each brownie bite. Let the brownies cool completely while you make the frosting.
Pipe chocolate caramel frosting onto the top of each brownie bite for a picture-perfect presentation!
Tips and Tricks
- Spray the muffin tin with baking spray before adding the brownie batter.
- Fill each mini muffin cup with about 1 tablespoon of batter. I use a measuring spoon to ensure the batter is divided evenly.
- Store frosted brownie bites covered at room temperature. Enjoy within 3 – 4 days for best taste.
- Use our homemade caramels instead of store bought!
Recipe FAQs
You can bake the batter in a cupcake pan or regular muffin tin instead, but they will be more like brownie cups than brownie bites. Still sounds delicious to me!
I used a pastry or frosting bag fitted with a star tip to frost these chocolate caramel brownie bites. If you don’t have one, scoop the frosting into a Ziploc bag and cut the tip of one corner off to create your own DIY frosting bag.
Yes, you can freeze these. I would freeze them unfrosted, then pipe the frosting on after they’ve thawed.

Ingredients
For the brownies:
- ½ cup unsalted butter
- 1 cup dark chocolate morsels
- 1 cup granulated sugar
- ¾ cup all-purpose flour
- 3 large eggs
- ½ teaspoon kosher salt
For the filling and frosting:
- 2 packages 7.9oz each DOVE® PROMISES Caramel Milk Chocolates
- ½ cup unsalted butter softened
- 2 cups powdered sugar
- ½ cup unsweetened dark chocolate cocoa powder
- ¼ cup milk
- 2 Tablespoons caramel sauce
Instructions
- Preheat oven to 375°F. Spray mini muffin pan with baking spray. Set aside.
- In a large, microwave safe bowl, combine butter and dark chocolate. Microwave for one minute. Stir and heat an additional 30 seconds, stirring until smooth.
- Add in sugar, flour, eggs, and salt. Blend just until combined (do not overmix).
- Using a 1 Tablespoon cookie scoop, divide brownie batter into muffin tins evenly. Bake for 11-13 minutes. While baking, unwrap DOVE® PROMISES Caramel Milk Chocolates.
- When brownies are done cooking, remove from oven and immediately press a chocolate caramel candy into the center. Allow brownies to cool in pan about 15 minutes, then remove and cool completely on a wire rack.
- For the frosting, beat the butter, cocoa powder, powdered sugar, milk and caramel sauce together in a mixing bowl until smooth (about 3-5 minutes, scraping down the sides of the bowl as needed). Pipe or spoon onto each cooled brownie bite. ENJOY!
Notes
- Any chocolate covered caramel will work in place of the Dove chocolates. Rolos are a great substitute.

These look delicious and so easy! Dove chocolate has been my favorite for a long time! I like to keep them in my freezer so they’re super cold and I can enjoy them slower (to avoid eating half a bag in one sitting).
