  • Taste & Texture – Sweet, chewy oatmeal cookies with warm spiced notes from Biscoff spread.
  • Ingredient Swaps – For nutty twist, swap out the Biscoff for peanut butter, almond butter, or Nutella.
  • Top Tip – Boil for exactly one minute to ensure the cookies set properly without becoming too soft or crumbly.
  • Storage- Keep these cookies in an airtight container for up to a week.

Most of us have made (or eaten) either no bake chocolate oatmeal cookies or a peanut butter no bake cookie before. They’re most often made with peanut butter and chocolate.

I love playing with different ways to mix up typical no bake cookies. Remember these decadent Nutella No Bake Cookies I shared a while ago?

This recipe is similar but instead of using cocoa powder and peanut butter (or nutella) you use Biscoff.

It holds the dry ingredients together and imbibes the cookies with all the great taste of Biscoff.

Ingredients Needed

Here’s a few highlights of some of the ingredients you’ll need. Be sure to scroll to the recipe card for full list with measurements.

  • Vanilla Extract– learn how to make vanilla extract for much less money than store bought!
  • Biscoff spread – Speculoos spread or cookie butter are the same thing and will work perfectly! 
  • Quick oats – Do not substitute steel cut or whole rolled oats. They’re not cut as finely and will affect the texture of the cookie.

Biscoff No Bake Cookies Recipe

Biscoff Cookies without turning on the oven! These no bake cookies made with creamy biscoff spread are a must try.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 36 cookies

Ingredients 

  • 2 cups granulated sugar
  • ½ cup milk skim up to 2% works best
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • ½ cup Biscoff spread
  • 2 ½ cups quick cook oatmeal

Instructions 

  • In large saucepan, mix butter, sugar and milk on medium high heat. Bring to a boil, and boil for one minute (don’t skip this step)! Remove from heat.
  • Stir in the Biscoff spread, vanilla and salt until thoroughly combined. Fold in oatmeal. If too runny, add in additional 1/4 cup oats.
  • Scoop cookie dough onto parchment paper in 1-2 Tbsp scoops. Allow to set (about one hour). Remove and store in air tight container. Yum.

Notes

  • Keep these in a container with a fitted lid to keep them from drying out.
  • You can chill these or not – it all depends on what you like.
  • Store cookies for up to one week at room temperature.

How to Make No Bake Cookies

These biscoff no bake cookies couldn’t be any easier to make! Since you don’t have to turn on the oven, this is the perfect recipe for satisfying your summertime cookie cravings

STEP 1. In large saucepan, mix butter, sugar and milk on medium high heat. Bring to a boil, and boil for one minute (don’t skip this step)! Remove from heat.

STEP 2. Stir in the Biscoff spread, vanilla and salt until thoroughly combined. Fold in oatmeal. Add an additional 1/4 cup of oats if you like them thick.

STEP 3. Scoop cookie dough onto parchment paper in 1-2 Tbsp scoops.

STEP 4. Allow to set in the fridge for about one hour. Remove and store in air tight container.

You’ll end up with about 5 dozen no bake Biscoff cookies, depending on how large you make them. That’s plenty to share, but be sure to save a few for yourself.

  1. FYI, I’m pretty sure this recipe has a typo. Three cups of oatmeal gives you one of the driest cookies you’ve ever seen or tasted. Delicious, but incredibly dry and crumbly. (When you get to the last of the dough, it doesn’t even hold together to scoop. It’s basixally granola at that point.) I remade them using only two cups of oatmeal and it turned out exactly like you’d expect a no bake cookie to be. (And, they’re somehow even more delicious!) A one-tablespoon scoop yields almost exactly three dozen cookies. 

  2. Just made these cookies…Everyone loved them! My only suggestion would be to cut the required sugar in half since the Biscoff is already sweet.

  3. Trader Joe’s has a Speculoos cookie spread that is their brand of Biscoff – it’s WAY cheaper than the Biscoff spread in our supermarket.

  4. I keep seeing posts about how everyone is addicted to Biscoff spread, but I can’t find it anywhere in Canada 🙁
    But this looks great! Perfect for the summer when it’s too hot to bake 😉

      if you’re anywhere near Toronto, McEwan’s at Don Mills, sells the actual biscoff now too!

    I have found Biscoff spread in the grocery store by the peanut butter.

    1. U can get biscoff at some Walmarts thats were I discovered it…they also have crunchy its the best…I eat it on apples love it!!!!!
