These candy stuffed cookies have a golden brown exterior with an gooey soft center. Delicious ribbons of buttery caramel combine with smooth semi-sweet chocolate for a treat no one can resists.
Ingredient Notes
- Brown Sugar & Granulated Sugar. A combination of sugars results in extra moist, extra chewy cookies!
- Caramel candies. Any soft candy works. I use the individually wrapped ones in the candy aisle. Unwrap them before baking. For best flavor, use my homemade caramels recipe!
- Salted butter. Usually I prefer unsalted butter in my baking, but salted butter complements the caramel in these cookies.
- Vanilla extract. My Vanilla Extract recipe is especially phenomenal in chocolate chip caramel cookies.
- Chocolate Chips. Regular or mini size semi-sweet chocolate chips works perfect.
How to Make Chocolate Chip Cookies with Caramel
Make Cookie Dough.
- Beat butter and sugars until fluffy. Add eggs and vanilla and combine well.
- Mix in the flour and baking soda to form a dough. Fold in chocolate chips.
Add caramel center.
- Scoop a spoonful of the cookie dough on to the baking sheet. Add a caramel on top. Wrap the cookie dough around the caramel.
- Repeat with all the cookie dough.
Bake.
- Bake caramel chocolate chip cookies for 12 to 14 minutes. Let them cool on the baking sheet for about 5 minutes. Transfer to a wire rack to cool completely.
- Bite into a delicious chocolate chip cookie oozing with caramel!
Tips and Tricks
- Don’t forget the parchment paper. Whenever you use caramel, be extra vigilant to prevent it from sticking to your counter or bakeware. The parchment will catch any stray melting caramel for easy clean up.
- Close sides of cookie dough. Before baking, make sure the top and bottom sides of each cookie dough ball are touching. This will keep the caramel from leaking out of the cookie as it bakes. You can gently pinch the sides together if needed.
- Storing. Transfer cooled cookies to an airtight container. Store at room temperature and enjoy within 4-5 days for best taste.
- Freeze. Use my guide on how to freeze cookie dough for best results.

Ingredients
- 1 cup salted butter softened
- ¾ cup light brown sugar packed
- ¼ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 2 cups semi sweet chocolate chips
- 24 caramels unwrapped
Instructions
- Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper (to keep any gooey caramel from sticking). Set aside.
- With an electric mixer, beat butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Add dry ingredients half at a time, until well combined.
- Stir in chocolate chips.
- Scoop a tablespoon of cookie dough onto baking sheets. Place one caramel on cookie dough. Add a second tablespoon on top and make sure the sides are closed so caramel doesn’t ooze out. Do this with remaining cookies.
- Bake 12-14 minutes. Allow to cool 5 minutes before moving to cooling rack to cool completely.

Will the caramel get hard when they’re cooled? Would like to make them for son’s job.
I made these thinking they would be my new favorite. However, first they stuck to the parchment paper. After waiting 5 minutes I tried to remove them. I got very few of them off without breaking them apart. Once I got them on the cooling rack, they got stuck again. I tried refrigerating the dough for awhile and tried backing more. Once again they stuck. Ended up just baking the rest without the caramel.
That’s odd that they stuck to the parchment paper (just making sure you didn’t accidentally use wax paper?). I’m sorry this was a struggle for you 🙁
