Why Use an Instant Pot
There are a handful of recipes that validate the use of an Instant Pot.
While of course it makes a tender Instant Pot Pot roast and juicy Instant Pot pork chops…but it’s the basic foods that truly make it worth every dollar.
For instance hard boiled eggs and mashed potatoes are best when made in an Instant Pot.
So, why make Sweet Potatoes in the Instant Pot?
Making sweet potatoes in the oven takes about an hour. And given the time it takes these to come to pressure, cook, and natural release, it’s about 45 minutes. So clearly not a huge time saver.
Whereas cooking sweet potatoes in the microwave takes about 5 minutes for one potato. Zippy fast, but dry as heck.
What is best about making sweet potatoes in the Instant Pot is they turn out so moist and creamy. Once you try it, you’ll understand how fluffy and smooth the sweet potato center gets when pressure cooked.
Important Ingredients
Instant Pot. Hopefully at this point I’ve convinced you to make the purchase. You can check out all my Instant Pot recipes and see how awesome this is to have in your kitchen.
What size you choose is completely up to you and your needs. My family uses the 6 qt Instant Pot, and that’s what I use to create all my recipes.
Sweet Potatoes. I chose sweet potatoes that are approximately 2-3 inches thick at most. If using thicker, larger sweet potatoes you may need to adjust the cook time accordingly.
- up to 3 inch in size- cook time of 18 minutes
- over 3 inch in size- cook time up to 35 minutes
There is no need to poke holes in the sweet potatoes.
Trivet. I used the trivet that came with my Instant Pot. You’ll need one that rises above the 1 cup of water line, so that the potatoes don’t get mushy and soft sitting in water.
Water. YES, this is a must have ingredient. In order to operate your Instant Pot properly, having water in the bottom creates the moisture needed.
How to Make Sweet Potatoes in the Instant Pot
Prep Potatoes. Wash the potatoes thoroughly. For best flavor, do not skip this step. Use a potato scrubber or washcloth to really get the extra dirt off.
Add Water. Place a trivet inside the pressure cooker. Add 1 cup of water. Place the potatoes on the trivet, stacking them if necessary.
Pressure Cook. Secure the lid and make sure the valve is set to “SEALING.” Select “HIGH PRESSURE” (or manual) with a cook time of 18 minutes.
When the cook time ends, allow the pressure to naturally release for 15 minutes.
Release pressure and remove potatoes from Instant Pot.
Serve.
How to serve Baked Sweet Potatoes
Whether you enjoy your sweet potatoes savory or sweet there are many toppings you can choose to put on your sweet potato.
Personally, I love a combination of butter, brown sugar, and cilantro!
You can make it a meal by topping your sweet potato with buffalo chicken or taco meat.
You can also use these sweet potatoes to make sweet potato casserole and candied sweet potatoes.!

What about Baked Potatoes?
If you’re using russet potatoes you can cook them the same way! You can also cook a combination of potatoes.

I have a couple of kids who prefer regular potatoes instead of sweet potatoes. In this case, I put a few sweet potatoes and a few russet potatoes in the Instant Pot for dinner.
Just make sure to try to choose potatoes that are the same size for even cooking!

If your only cooking 2 potatoes do you cut the time?
Nope. Same time. It just may come to pressure faster 🙂
I have an 8 quart. Will that make a difference in cooking time?
I don’t think so. But add extra water to the bottom of the pot!
Do you have to poke the potatoes before cooking?
