Why this Pistachio Dessert is Best
I get it. I have an addiction to Rice Krispie Treats. I talk a lot about how to make Rice Krispie Treats. Maybe it’s a problem, but I can’t help it. It’s become my signature over the years.
When it comes to a bake sale or birthday party, I’m always the one who shows up with the Rice Krispie Treats. It’s my happy duty.
Some girls are all about the cookies, brownies and cakes, right?
Well, I’m all about the Rice Krispie desserts. I’ve been making variations on these rice cereal treats for as long as I can remember.
Pudding in Desserts
Adding pudding mix to your krispy treats can change the flavor instantly. The possibilities are endless! I probably use mix pudding in desserts more than I use it to make actual pudding! Especially now that I know how to use it in my beloved Rice Krispie Treats!
Pudding in desserts is a genius move, people. First I tried Banana Krispie Treats. They turned out amazing, I felt it was time to experiment!

Ingredient Notes
This pistachio rice krispie treat recipe is so simple to make but it tastes like something you’d buy at a fancy confectionary.
To make these dark chocolate pistachio dessert bars, I used:

- Butter
- Mini marshmallows
- Rice Krispie Cereal
- Pistachio pudding mix
- Vanilla Extract
- Melted dark chocolate
How to Make Pistachio Rice Krispies
STEP 1. In large pot, melt butter over medium heat. Add all but one cup of the mini marshmallows and continue stirring until completely smooth. Remove from heat. Mix in vanilla extract.
STEP 2. Add dry pistachio pudding mix. Fold in with spatula. Add in cereal and remaining 1 cup of marshmallows. Mix completely.
STEP 3. Pour the warm rice krispie mixture into a parchment paper lined square baking dish. Allow treats to cool and set at least one hour. Remove from dish, remove parchment paper. Cut into 16 squares.
Drizzle with melted dark chocolate, allow to set, about 15 minutes before eating!
How do you melt dark chocolate?
- If you have a double boiler, put it to good use here for melting chocolate chips or a bar of dark chocolate broken into pieces.
- If you don’t have one, it’s easy to melt the chocolate in the microwave!
- Put your chocolate chips or pieces in a bowl and microwave for 30 second increments, stirring after each one, until the chocolate is melty and smooth.
I prefer using Ghirardelli Dark Chocolate melting wafers because they melt so smooth and creamy, and taste amazing!
Tips for Drizzling Melted chocolate
To create a pretty topping for these Rice Crispy Squares without any lumps or clumps, dip a fork in the melted chocolate and tap off any excess. Then, drizzle the dark chocolate evenly over each bar.
I place a sheet of parchment paper under a wire rack then put the treat bars on the rack before decorating with chocolate. There’s no sticky chocolate to clean off the counters this way. . . meaning you can get right to the important part: eating your pistachio desserts!
Storing Rice Krispie Treats
I like to store these chocolate covered treats in the fridge in an airtight container or ziploc bag.
They taste delicious cold and the cooler temperature keeps the chocolate from melting.
They also keep well in an airtight container at room temperature.
Go ahead and add these Pistacho Rice Krispie Treats with Dark Chocolate to your dessert menu! They’ll be the perfect addition to a birthday celebration, a family dinner or any party.

I made these today. I used white chocolate pudding instead of pistachio. Turned out really good. Didn’t put chocolate on top.
