Why Make Your Own Chocolate Nonpareils Candy
Nonpareils are small, round sprinkles that look a little bit like tiny beads. They’re made with sugar and starch, and while most are white, you can also get them in a rainbow of colors.
What makes nonpareils unique—or, “without equal,” which is what their name means in French—is that when you bite into them, they have a delightful crunch.
If you’ve ever had Sno-Caps candies at the movie theater, you know what I mean!

How to Make Chocolate Nonpareils Candy
Prepare:
- Pour the nonpareils in a baking dish.
- Melt the chocolate in the microwave until it’s smooth when stirred.
Make the Candies: Transfer the chocolate to a ziploc bag and snip off the corner. Pipe swirls of chocolate onto the nonpareils. Make various sizes for visual appeal.
Chill and Finish:
- Move the pan to the refrigerator and chill for 15 minutes.
- Remove the chocolates from the pan.
- If you have more chocolate to use, repeat with the remaining nonpareils.
Tips and Tricks
- I like to use Ghirardelli melting wafers, which don’t have to be tempered or have any oil added.
- Store candies in an airtight container at room temperature for up to 2 weeks. Keep them out of humid places, which can cause the chocolate to bloom.
- Don’t throw out the extra nonpareils when you’re finished! If you line the baking pan with foil, you can lift it out of the pan and then fold it in half and funnel the sprinkles back into the bottle.

Ingredients
- ½ cup nonpareils
- 1 cup Ghirardelli Dark Chocolate melting wafers
Instructions
- Pour nonpareils into an 8 or 9-inch baking dish. Set aside.
- Melt chocolate in a glass bowl in the microwave for one minute. Stir until smooth.
- Spoon melted chocolate into a ziploc bag, snip off the corner. Swirl circles of chocolate directly onto the sprinkles. You can make these as big or as little as you prefer.
- Once you've filled the pan, gently move the pan to the refrigerator and set for 15 minutes. When chilled, take each chocolate off the sprinkles, knocking off any small drizzles of chocolate. If you still have more melted chocolate, repeat with the sprinkles in the pan.
Notes
- Using Ghirardelli melting wafers means you don’t have to worry about tempering your chocolate or adding oils. And they taste delicious too!
