Four Ingredient Cookie Bars
Sometimes you don’t want to run all over the store tracking down the ingredients you need to make a delicious dessert.
When you don’t have the time or the energy for a complicated cookie bar recipe, these easy four ingredient fudge cookie bars are the solution! Not to be confused with these 3 ingredient peanut butter cookies!
Starting with a roll of cookie dough, you can make a layered cookie bar that’s full of chocolate and topped with a crunchy layer of M&Ms.
The colorful candies add a rainbow splash to these cookie bars that’s just right for a birthday party!
Ingredient Notes
Here’s all you need to make fudge cookie bars:
- Cookie dough – Use a 30 ounce package of your favorite chilled chocolate chip cookie dough.
- Sweetened condensed milk
- Chocolate chips – I used milk chocolate, but semi sweet would work too for a darker chocolate flavor.
- Mini M&Ms – Use the package of baking M&Ms for best results or swap full sized M&Ms if preferred.
How to Make Rainbow Cookie Bars
First, bake the cookie bars.
You can make the fudge layer for these bars using your microwave! I heat the condensed milk and the chocolate morsels together in the microwave for 30 second increments.
Stir between each interval and repeat until the fudge mixture is smooth and all the chocolate is fully melted. For me, this takes about 90 – 120 seconds total of microwave time.
Then, you pour the fudge layer over a baked layer of cookie dough, top with M&Ms and let the bars chill in the fridge until the fudge layer is set. This takes at least 2 hours but you could also make them in advance to let the fudge chill over night.
Slice the bars and store in an airtight container until ready to eat.

Hi, I found this on FoodGawker and was hoping I could get your permission to post the recipe on my instagram recipe page (@foodie_recipes) as it looks delicious! I will tag you in the photo and put your website address on the post! Hope this is okay, thanks 🙂 x
These look like my kid’s dream bar!!
I make a version of these, they are always a huge hit. Especially with my husband.
Mmm I could eat a whole platter of these! So fun. Happy birthday to your husband!
Thanks Sues!!
I love these! Super cute and chocolatey!
These bars are amazing and so easy! I love it!
Thanks girl 🙂
I don’t have a problem with refrigerated cookie dough – these look fantastic! Happy birthday to your husband!
Happy birthday to him!! I certainly would like these for my birthday!!
I won’t judge you for using refrigerated cookie dough if you ignore my use of cake mixes and cool whip… I love the scattering of mini M&M’s on the top and the fudgy middle layer will go over well here:) Don’t feel bad; my husband would’ve picked a store-bought angel food cake with a tub of frosting smeared on it. His mom’s creation, not mine!
I currently have 4 tubs of Cool Whip in my freezer, and one in my fridge. No judgement here 🙂
Love these bars, the colors, so bright and cheery and perfect! Pinned.
Birthdays. As a dessert blogger, you’d think that when a family member has a bday I’d be the first one there with a big gorgeous cake? No. Let’s open my freezer and see what frozen dough balls I can pop in the oven and bake. LOL And I was already starting with pumpkin recipes a couple months ago too and Xmas stuff…red velvet is on my agenda next week. LOL
Haha, I made a red velvet recipe last week!! Oh our crazy lives…
Happy Birthday to your husband! These are such a fun colorful way to celebrate.
I love that these are so simple, yet fabulous looking!!! That 2 ingredient microwave fudge is a favorite here too! Happy birthday Michael! And enjoy that ice cream…that would be my hubby’s choice too! LOL!
Do not read into it at all! I have the same problem. I think my family is just spoiled with the homemade stuff and they yearn for processed, packaged food.
I’ll eat this any day! Nothing beats fudge on cookie bars, especially with M & Ms.
Happy Birthday to your hubby! And mine would always pick oreo ice cream over the fanciest cake, so I say, follow the bday boy’s wishes!
If the treats are as good as this one…I don’t think it really matters when you enjoy them! Delish!
