Avalanche Rice Krispie Treats
As many of you already know, rice krispie treats are one of my all time favorite desserts. I’ve even come up with a whole set of tips for how to make rice krispie treats at home.
Childish? Maybe. Delicious? Yes.
Also known as avalanche bark, these Rice Krispie Treats contain peanut butter, chocolate chips, and lots of mini marshmallows.
People know Rocky Mountain Chocolate Factory for their giant avalanche bars and their Tiger Butter!
- Combination of white chocolate and semi-sweet chocolate.
- Creamy peanut butter.
- Most importantly, rice krispies!
Making rice krispie treats reminds me of the days back in high school when my friend Steph and I would make a whole pan of them and eat it in one sitting.
This is totally possible with today’s dessert!
Ingredient Notes
Here’s everything you need to make Rocky Mountain Chocolate Factory Avalanche Bark Bars. Be sure to scroll down to the recipe card for full amounts.
- White chocolate chips– Use a good quality, I love Ghirardelli brand.
- Peanut butter – I used creamy peanut butter but chunky would be good too if you like pieces of peanuts in your bars.
- Semi-sweet chocolate chips – Miniature morsels work best. If you only have full sized, those will work just fine too.
- Mini-marshmallows– make sure they are fresh and not stale. Stale marshmallows don’t melt as well, and the final result will be stale tasting too!
- Rice Krispies Cereal – use fresh, not stale cereal!
It takes hardly any time or effort at all to make copycat homemade Avalanche Bars. I found the hardest part was WAITING while they finished setting up in the fridge.
How to Make Avalanche Bars
You’ll love how easy this avalanche rice crispy treats recipe is to assemble and eat!
- STEP 1. Melt the white chocolate and peanut butter together until creamy. I use the microwave, but a double boiler works too. Allow to cool a few minutes before going to next step.
- STEP 2. Fold in the rice krispies cereal.
- STEP 3. Add the marshmallows and semi-sweet morsels and stir until combined. Lightly press it into a buttered 9-inch baking dish. Sprinkle a few extra chocolate chips on top!
- STEP 4. Refrigerate for 30 minutes, slice into squares and serve cold!
Tips and Tricks
- Be gentle: The firmer you press, the firmer the finished treats will be and they may be difficult to remove from the pan.
- Melting white chocolate: You can use the microwave to melt the white chocolate chips and peanut butter. Place them in a microwave safe glass bowl and zap for 30 – 45 seconds at a time, stirring between rounds until everything comes together.
- Be even: When you fold in the chocolate chips and marshmallows, make sure to spread them evenly in the rice krispie mixture. That way you get all the flavors and textures of the avalanche recipe in every bite!
- Storage. Store treats in an airtight container at room temperature or in the refrigerator for up to 5 days.

Ingredients
- 2 bags white chocolate chips 11 ounce each
- ½ cup creamy peanut butter
- 6 cups rice krispies cereal
- 1 cup mini chocolate chip morsels
- 3 cups mini marshmallows
Instructions
- Melt white chocolate chips and peanut butter together until creamy. Fold in rice krispies.
- Allow to cool to room temperature (about 10 minutes). Stir in mini morsels and mini marshmallows.
- Pour into a buttered 9-inch baking dish, pressing lightly. Refrigerate for 30 minutes, cut into squares and serve cold. Enjoy!

I tried to make these several times and kept messing up – I think I saw something you might want to correct when I made them this morning. In your step by step directions it says to cool after adding the marshmallows and chocolate chips but in your recipe it says to cool before adding the marshmallows and chocolate chips. I did it like the recipe card this morning and I think they are finally right! (My husband didn’t mind all the failures though.)
These really belong in a 9×13 pan. Or two 9×9s. I used the same crate and barrel dish as you have in your photos and it was almost overflowing. All other recipes for these bars call for about half of the ingredients and a 9×9 pan. I’m sure they’ll be tasty when we try them tomorrow. They’re just way too thick.
Hiii! I tried to make these tonight & sadly they fell apart. I followed the instructions, maybe I added too much Rice Krispie cereal? I added more peanut butter in hopes it’ll keep it in tact but they still fall apart. Any suggestions? They taste good! But won’t stay intact 🥺😭

Umm, so I super miss the days of eating an entire pan of Rice Krispies in one sitting, lol. Now, I’d have to start walking to work to balance that out and I live 20 miles from where I work. I’d still go for a “one sitting” eating on occasion though! I used to live by a Rocky Mountain Chocolate Factory and I forgot how much I loved these — can’t wait to try them!
